Easy Pancake Sausage Muffins

A quick and easy breakfast for those on-the-go mornings. Pancake Sausage Muffins are delicious, family-friendly, and the easiest breakfast recipe! This recipe only takes about 10 minutes of prep work!

A little breakfast meal prep on Sundays creates a calmer routine for the week! There’s no shame in taking shortcuts to make it extra quick and easy. As busy moms, we need shortcuts and simple recipes. Precooked sausage or turkey links and pancake mix are the only ingredients needed for these muffins. Another little note is that they freeze incredibly well! You can make a big batch in minutes and then freeze the leftovers to eat throughout the week.

Pancake Sausage Muffins Ingredients

  • Pancake Mix
  • Sausage Links
  • Cooking Spray
  • Syrup

How To Make Pancake Sausage Bites

The first step is to preheat the oven to 350 degrees. In a mixing bowl, prepare your favorite pancake mix according to the directions on the box.

Be sure to spray the muffin pan so the pancake batter doesn’t stick. After all the pancake mix is ready, fill the muffin tin with batter. Cut up each of the sausage links and place several sausage pieces on top of the pancake batter.

Place in the oven and bake for 15-30 minutes or until the tops spring back.

Serve with syrup and enjoy this quick and easy breakfast!

Tips to make the Muffins

  • You can make these into mini muffins if you prefer. Just use a mini muffin pan.
  • If you want to freeze them place them into a single layer and pop them into the freezer for about an hour. This will flash freeze them so they won’t stick together. Then you can put them into a freezer-safe zip bag making sure to get all the air out. For individual servings, you can wrap them in plastic wrap and store them in a gallon-sized bag. To reheat, pop onto a microwave-safe plate and reheat for 30-45 seconds.
  • Have fun experimenting with different flavors! Try chocolate chips or cinnamon sugar with blueberry pancake mix.

Pancake Sausage Muffins

Sausage Pancake Muffins are totally delicious, family-friendly, and easy as can be! This recipe takes about 5 minutes of prep work and is the ultimate grab and go healthier breakfast for busy mornings!

Ingredients

  • 2 cups pancake mix
  • 1 ½ cups water
  • 1 package cooked sausage links
  • syrup for serving

Instructions

  1. Pre-heat oven to 350 degrees.

  3. Either spray muffin tin with nonstick spray or use muffin liners. Fill 2/3 of the way full.

  4. Cut up each of the sausage links and place several sausage pieces on top of the pancake batter.

  5. Place in the oven and bake for about 15-30 minutes or until the tops spring back.

  6. Serve with syrup & enjoy.
